Tortellini Pepperoncini Salad
1- 9 oz. package of Tortellini
2 C. Tomatoes- I use grape size, cut in half
2 C. Fresh Spinach Leaves, slightly chopped
1/2 C. Pepperoncini Peppers chopped
1/3 C. fresh grated Parmesan Cheese
1/4 C. Basil, chopped
1 can Kidney Beans
1/3 C. Balsamic Vinegar
2 Tbsp. Lemon juice- fresh
2 Tbsp. Olive Oil
Black PepperCook Tortellini according to package. Mix lemon juice, olive oil, balsamic vinegar & pepper together. Mix all other ingredients in a large bowl. Pour dressing over salad and mix it all together. Serve right away or chill then serve, tastes great both ways. I add extra balsamic vinegar on top when I serve mine. You could also add some red pepper flakes for heat.
This dish is perfect to bring to a BBQ or picnic since it is oil based & doesn’t have any mayo that would get gross in the sun.
